In the Miyagi region, a traditional sweet known as “zunda mochi” has been made since ancient times, and it involves mixing sugar and roughly ground soybeans, which is then used to coat mochi rice cakes. It involves mashing boiled and softened “zunda beans” (green soybeans), Its distinctive green color, sweet flavor, and coarse texture of the mashed edamame beans continue to be cherished today as a beloved traditional Japanese sweet of the people of the Miyagi Prefecture.
